Apple Berry Trifle

Ingredients

Cake

  • 1 box gluten-free vanilla cake mix – we love Simple Mills

Berries

  • 1 lb strawberries, stem removed and quartered
  • 6 oz raspberries
  • 1 dry pint blueberries
  • 1 Sunrise Magic® Apple, thinly sliced
  • 1 lemon, juiced
  • 1 tbsp pure maple syrup

Mascarpone Whip

  • 8 oz mascarpone
  • 1 pint heavy cream
  • 3 tbsp pure maple syrup
  • ½ tsp vanilla extract

Directions

  1. Bake the cake according to package directions. Let the cake cool completely before slicing into 1” cubes.
  2. Make the berries by tossing everything into a bowl together until combined. Let marinate for about 15 minutes.
  3. Meanwhile, make the mascarpone whip by combining the mascarpone, heavy cream, maple syrup, and vanilla into a large mixing bowl.
  4. Using an electric mixer, whip on medium high until stiff peaks form. Do not overmix.
  5. To assemble the trifle, place half of the cubed cake into the bottom of your trifle pan, followed by ½ of the mascarpone whip, and ½ of the berries.
  6. Finish layering with the remaining cake, whip, and berries.
  7. Serve immediately or let chill in the fridge before serving.

Make it Dairy-Free:
Use 8oz of dairy-free cream cheese (we recommend Kite Hill) and 1 tub of dairy-free “cool whip” (we recommend SoDelicious). Whip the cream cheese, maple syrup, and vanilla in a large mixing bowl with an electric mixer. After smooth and creamy, add in the dairy-free cool whip and mix until combined.
