Apple Bundt Cake

The beauty of the bundt pan is that the end result is an evenly cooked delicious cake. This recipe checks all the boxes with a nice, balanced frosting and Sunrise Magic® apples featured front and center.

Ingredients

Apple Bundt Cake

  • ½ cup butter, softened
  • 1 cup coconut sugar
  • 3 eggs1 tsp vanilla
  • ¼ cup avocado oil
  • 3/4 cup apple cider or unfiltered apple juice
  • ½ cup dairy-free milk
  • 2 ½ cups all purpose flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 2 Sunrise Magic® Apple, peeled and grated

Maple Spiced Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • ¼ cup maple syrup
  • 1 cups powdered sugar
  • 2 tbsp milk of choice
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg

Directions

  1. Preheat the oven to 350 degrees Fahrenheit and lightly grease a bundt pan.
  2. In a large mixing bowl, combine the softened butter and coconut sugar. Beat on high until just combined.
  3. Add one egg at a time, and beat until combined.
  4. Add the vanilla, avocado oil, apple cider, and dairy free milk. Mix until everything is thoroughly incorporated.
  5. In a separate bowl, combine the flour, baking soda, baking powder, and salt. Stir to combine.
  6. Pour the dry ingredients into the wet, and carefully fold with a spatula until just combined. Do not overmix.
  7. Carefully fold in the apples.
  8. Pour the batter into the prepared bundt pan. Bake for about 45-55 minutes, checking at the 45 minute mark. The cake will be done when a toothpick inserted comes out clean.
  9. Once done, let cool in the pan for about 20 minutes, then carefully flip out onto a flat surface to continue cooling, about 30 minutes to 1 hour.
  10. Make the maple spiced frosting by whipping the cream cheese and maple syrup together with an electric mixer. Once smooth, add the powdered sugar and milk. Mix with the electric mixer until smooth.
  11. Once the cake is completely cooled, pour the frosting over the top. Serve immediately!
  12. Store the cake in the fridge.

Note: You can try subbing 1:1 all-purpose gluten-free flour, but it has not been tested and may result in a different texture.
